14K gold is 58.5% pure, so its melt value is $78.77 per gram today, or $122.50 per pennyweight. Jewelers and pawn shops usually offer 70–90% of melt value.
Spot is the wholesale price of one troy ounce of pure gold. Buyers have to refine scrap, cover overhead and make a margin, so cash offers for jewelry land below melt value, while coins and bars sell above spot because dealers add a premium.
Precious metals are weighed in troy ounces. One troy ounce is 31.1035 grams, about 10% heavier than the 28.35-gram ounce used for food. Every gold price quoted per ounce means per troy ounce.
